Nicole Polizzi was born in the Chilean city of Santiago.
When she was adopted, she was only six months old. An Italian-American couple adopted her. Her mother, Helen Polizzi, worked in the office, and her father, Andy Polizzi, was a firefighter. She was well-educated and went to school in Marlboro, New York.
Nicole was admitted to Brookdale Community College after graduating from high school, where she completed her studies to become a veterinary technician.

She took DNA tests twice to learn more about her ancestors and discovered that even though she was born in Chile, she was not 100% Chilean. Nicole suffered from a rare eating disorder in high school, which caused her to lose weight.
During childbirth, she lost a lot of weight.
